2 Tbl olive oil
1 small zucchini, diced
5 ½ c. chicken broth
1 bay leaf
½ tsp salt
Black pepper to taste
1 medium onion, chopped
1 medium carrot, diced
1 tsp dried basil
1 can crushed tomatoes
8-9 oz. fresh or frozen tortellini
1 lb. Italian sausage, browned and drained
Heat oil in soup pot. Add onion, zucchini and carrot. Saute over medium 8-10 minutes, stirring often. Add chicken broth, basil, bay leaf, tomatoes, salt and sausage. Bring to low boil, cook for 2 minutes. Add tortellini and simmer for 5 minutes.
